Shepherd's Choice Recipes

Old Fashioned Gingerbread

1½ cup sifted flour
¾ tsp. soda
½ tsp. salt
½ tsp ginger
¼ tsp cloves
¼ tsp cinnamon

½ cup butter
½ cup sugar
1 large egg
½ cup molasses
2/3 cup boiling water

Grease and flour an 8 X 8 pan. Pre-heat oven to 375 deg.

Mix sugar and butter.
Sift together dry ingredients. Set aside. Mix sugar and butter. Add egg and molasses; beat well. Add sifted dry ingredients and beat in. Add boiling water, a little at a time. Batter is very thin. Bake at 375 deg. 25-30 minutes.

Serve with fresh whipped cream.





Kathy¹s Rhubarb Muffins

2 cups finely chopped rhubarb
1/2 cup granulated sugar
2 teaspoons grated orange peel
2-1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1-teaspoon baking soda
2 beaten eggs
3/4 cup sour milk (3/4 cup milk + 1 tablespoon vinegar)
3 tablespoons butter, melted

Combine rhubarb, 1/4 cup of the granulated sugar, and orange peel; let stand 5 minutes. In mixing bowl stir together flour, the remaining granulated
sugar, baking powder, soda and 1/2 teaspoon salt; make a well in center.
Combine eggs, buttermilk or sour milk, and melted butter. Add all at once to
dry ingredients, stirring just until moistened (batter should be lumpy)
Gently fold in rhubarb mixture. Fill greased or paper-bake-cup-lined muffin
cups 2/3 full. Bake in 375° oven 20 to 25 minutes. Makes 16 to 18 muffins.






Rhubarb Custard Pie

Pre-heat oven to 425 degrees
Chop enough rhubarb to fill pie shell.

Combine:
¾ Cup sugar, 2Tbls. Flour

mix and add:
2 beaten eggs,
2Tbls. melted butter,
¼ tsp. almond extract
1 cup evaporated milk (or half and half)

pour over rhubarb and bake for 10 minutes. Turn oven down to 325 and bake another 30 minutes or until custard is set.








Shepherd's Choice Sugar Cookies

Thank you to all of you brave folks who ventured out on Saturday to our
Holiday Open House. One very popular item at the Open House was our homemade sugar cookies. The requests for this recipe have been coming in and we're happy to share it with all of you.

1 cup butter
1/2 cup sugar
1/2 cup powdered sugar
1 egg
1 tsp. vanilla
1/4 tsp salt
1/4 tsp soda
1/4 tsp cream of tartar
2 cups flour

Cream butter and sugars. Add egg and vanilla and mix well. Add rest of
ingredients and mix thoroughly. Roll into small balls and place on greased
cookie sheet. Dip a glass in sugar and press the cookie balls flat.

*hint: butter your hands for less sticking while rolling out balls.

Bake at 350 degrees until delicate golden brown.




Chocolate Chip Cookie Recipe


1 cup butter
1 cup white sugar
1 cup brown sugar
1 tsp vanilla
2 cups flour
2 ½ cups blended old fashioned oatmeal
½ tsp salt
1 tsp baking powder
2 eggs
12 oz. chocolate chips
4 oz unsweetened baking chocolate (chop on cutting board)
1 ½ cups chopped nuts


Blend 2 ½ cups oatmeal to a fine powder
Cream butter and sugars
Add eggs and vanilla
Mix together with flour, oatmeal, salt, baking powder and baking soda
Add chips, nuts and chopped chocolate
Roll into balls and place 2 apart on cookie sheet

Bake 10 min at 375 degrees
